Chicken Tortilla Soup

Ingredients

  • 3 tablespoons butter
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tablespoon flour
  • 1 packet dry taco seasoning mix
  • 3 14 oz cans chicken broth
  • 4 cups half and half
  • 1 10.75 oz can cream of chicken soup
  • 1 15 oz can creamed corn
  • 2 teaspoon ground cumin
  • 1 can kidney bean
  • 1 cup salsa
  • 6 boneless skinless chicken breast
  • cooked and shredded
  • 1/4 cup fresh cilantro chopped
  • 16 oz tortilla chips
  • 8 oz shredded Monterey Jack Cheese

Preparation

Step 1

heat oil and saute oinion and garlic for 5 minutes
add flour and cook for 1 minute
add taco seasoning then add broth and half and half
bring to a boil
then reduce heat to low
add soup, corn, salsa, chicken and 1/4 cup cilantro
bring to a boil and simmer for 15 minutes
to serve crumble tortilla chips into bowl then add soup
top with more chips, cheese and cilantro
