Cornish Hens with Wild Rice

My mom always referred to this dish as her romantic dish. Something about the cute little cornish games hens served up with this citrus rice always felt very special to her. I remember eating this on many Valentine's days, and I frequently requested it for my birthday dinner.

Ingredients

  • Hens:
  • 2 cornish hens, thawed
  • 2 Tbsp. butter
  • 3 Tbsp. orange juice
  • Rice:
  • 1 c. rice (brown and wild mix)
  • 1 can chicken broth + 1/4 c. water
  • 3/4 c. golden raisins
  • 1/2 c. dry white wine
  • 1 c. sliced button mushrooms
  • 2 Tbsp. butter
  • 1 Tbsp. orange zest

Step 1

Hens:
Preheat oven to 375. Rinse hens, pat dry. Put hens in shallow roasting pan sprayed with non-stick cooking spray. Melt together butter and orange juice and brush on hens. Salt and pepper. Roast uncovered at 375 for 1 hour.

Rice:
Soak raisins in wine for 15 minutes or longer. Meanwhile, cook rice in broth and water according to directions on rice package. In skillet cook mushrooms in butter until liquid from mushrooms has evaporated. To the cooked mushrooms, stir in rice, raisins and orange zest. Spoon mixture into rectangular glass baking dish. Cut hens in half and place on top of rice. Add broth or defatted cooking juice if needed. Bake 30 more minutes at 375.
