Ingredients
- 1/2 cup margarine or butter
- 1 small green bell pepper, chopped (1/2 cup)
- 1 cup mushrooms, sliced
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 1/2 cups milk
- 1 1/4 cups chicken broth
- 2 cups cut-up cooked chicken or turkey
- 1 jar (2 oz) diced piemientos, drained
- 3 cups hot cooked rice, toast, or mashed potatoes
Preparation
Step 1
1) Melt butter or margarine in 3-qt saucepan. Cook bell pepper & mushrooms, stirring occasionally until bell pepper is crisp-tender.
2) Stir in flour, salt & pepper; stirring constantly until bubbly; then remove from heat.
3) Stir in milk & broth. Heat to boiling; stirring constantly. Boil & stir 1 minute.
4) Stir in chicken & piemientos; cook until hot.
5) Serve over rice, toast or mashed potatoes.
