Fool-Proof Bananan Nut Bread
By á-6382
I don't really enjoy baking as much as cooking because I always seem to find a way to mess up the perfect combination of ingredients; always resulting in a baking disaster. However, I never mess up my mom's super easy banana bread. It turns out perfectly moist every time. Thanks Mom!
Ingredients
- 3/4 c. butter softened
- 1 1/2 c. sugar
- 1 1/2 c mashed bananas (4 med.)
- 2 eggs
- 1 tsp. vanilla
- 2 c. flour
- 1 heaping tsp. baking soda
- 3/4 tsp. salt
- 1/2 c. buttermilk
- 3/4 cup chopped nuts

Preparation
Step 1
Preheat oven to 325. Cream butter and sugar together in a food processor. Blend in bananas, eggs and vanilla. Blend in dry and alternate with buttermilk until all ingredients are blended and a batter is formed. Pulse in chopped nuts. Pour into greased baking pans and bake for 1 1/4 - 1 1/2 hours or until a toothpick inserted comes out clean.
My method (since I don't bake) is to throw all the ingredients except the nuts into the food processor at one time. Blend them all together until a batter forms. Pulse in nuts. Then follow baking instructions. My method seems to work just fine every time!
