Fennel, Orange and Parmigiano Salad

Ingredients

  • Salad:
  • one large fennel bulb, thinly sliced
  • 1 head Bibb lettuce, torn
  • 2 oranges, peeled and thinly sliced
  • 1 c. parsley, chopped
  • shaved parmigiano
  • Vinaigrette:
  • 2 tsp. orange rind
  • 6 Tbsp. orange juice
  • 2 Tbsp. white wine vinegar
  • 2 Tbsp. honey
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cloves garlic, minced

Step 1

Combine salad ingredients in a large salad bowl. Combine all vinaigrette ingredients in a sealed container and shake until well mixed. Chill vinaigrette, pour over salad and toss together.
