Ingredients
- 16 ounces tomato concasse
- 4 ounces fresh spinach
- 1/2 ounce fresh garlic slivered
- 1/2 ounce shallots slivered
- 1 ounce fresh rosemary finely chopped
- 2 ounces fresh oregano finely chopped
- 2 ounces fresh basil julienned
- 4 ounces Chardonnay wine
- 4 ounces marinara sauce
- 4 ounces butter
- 2 teaspoons kosher salt
- 1/2 teaspoon white pepper
- 2 ounces olive oil

Step 1
Heat olive oil in a saucepan. Add garlic and shallots; sauté until garlic becomes golden brown. Add wine; cook off the alcohol, then add tomatoes, spinach, herbs, salt and pepper; simmer 1 minute. Add marinara sauce and the butter; simmer until the butter melts and the sauce comes together.
