Ingredients
- 4 skinless, boneless chicken breast halves
- 1 C. Chicken broth
- 1 T. Minced garlic
- 1/2 t. Dried rosemary leaves
- 1/4 t. Thyme
- 2 large sweet potatoes, cut into 1/2" pieces
- 2 C. Fresh whole green beans
Preparation
Step 1
Heat little oil. Add chicken and cook for 10 mins. Or until chicken is brown on both sides. Remove chicken, set aside. On high, add rest of ingredients to skillet. Boil 5 minutes. Return chicken to skillet, reduce heat to low. Cover and cook 12 mins. Or until chicken and potatoes are tender.
Herbed chicken Dijon with wine: add 1/4 C. Wine, 1 T. Lemon juice and 2 T. Dijon mustard with broth. Substitute Yukon gold potatoes for sweet.
Note: try in crock pot.
