Tortellini salad with cranberries, pecans and feta

Ingredients

  • 1 package organic romaine lettuce
  • 2 cups frozen tri-colored cheese tortellini
  • 1/2 cup feta cheese
  • 1/4 cup chopped pecans
  • 1/3 cup dried cranberries
  • Balsamic vinaigrette
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons light brown sugar
  • 1 tablespoon lemon juice
  • 1 clove of garlic - made into paste with microplane
  • salt
  • pepper
  • 6-7 tablespoons extra virgin olive oil
