Velma's Southern Shrimp and Sausage

Ingredients
- 1 T. olive oil
- 1 onion
- 1 celery stalk, sliced
- 2 fully cooked Andoville and or other chicken sausage (half of a 12 oz. package) sliced
- 1 lb. med shrimp pealed and deveined
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1/4 tes. creole seasoning or a pinch of cayenne pepper
- 1 can diced tomatoes
- salt and freshly ground pepper

Preparation
Step 1
In a large skillet over medium heat add oil. Saute the onion, bell peppers, and celery for -8 min.
Add sausage and Creole seasoning and saute for 2 min. Add tomatoes and their juices. Reduce the heat and simmer for 5-10 min or until thickened. Stir occasionally. Add shrimp and cook for 3-5 min or until cooked through. Season with salt and pepper.
