Ingredients

    T. olive oil

  • 1

    onion

  • 1

    celery stalk, sliced

  • 2

    fully cooked Andoville and or other chicken sausage (half of a 12 oz. package) sliced

  • 1

    lb. med shrimp pealed and deveined

  • 1

    red bell pepper chopped

  • 1

    green bell pepper chopped

  • 1/4

    tes. creole seasoning or a pinch of cayenne pepper

  • 1

    can diced tomatoes

  • salt and freshly ground pepper

Directions

In a large skillet over medium heat add oil. Saute the onion, bell peppers, and celery for -8 min. Add sausage and Creole seasoning and saute for 2 min. Add tomatoes and their juices. Reduce the heat and simmer for 5-10 min or until thickened. Stir occasionally. Add shrimp and cook for 3-5 min or until cooked through. Season with salt and pepper.
