Butterscotch Apple Cake

Ingredients

  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3 large apples (peeled, cored, chopped)
  • 2 eggs
  • 2 1/2 cups all purpose flour
  • 1 tsp. salt
  • 3/4 tsp. cinnamon
  • 1 - 6oz. pkg. butterscotch chips

Preparation

Step 1

Preheat oven to 350. Mix oil, eggs, and sugar. Sift flour, baking powder, salt, baking soda, and cinnamon. Blend with egg mixture. Batter will be very thick. Stir in apples and raisins if desired. Pour into ungreased 9 x 13 pan. Sprinkle with butterscotch chips. Bake 45 - 60 minutes. Cool. Cut into 3" squares.
