Ingredients
- 14 oz firm silken tofu
- 1 cream cheese
- 2/3 C lemon juice
- 1/2 tsp almond extract
- 2 Tbsp cornstarch
- 9 " prepared pie crust

Step 1
Preheat oven 350 degrees
Blend tofu and cheese in processor for 1 min. Then add sugar and process till smooth and no sugar granules are left - about 3-5 mins.
In separate bowl, combine lemon juice, & almond extract. Whisk in cornstarch. Pour mixture into processor and mix till very smooth. Pour into pie crust and bake 45 mins.
Cool at room temp for 2 hours then refrigerate overnight.
