Ricotta with Honey & Fruit

This is a refreshing dish to have at a party or barbecue. Summer fruit makes this dish taste great.

Ingredients

  • 3/4 lb ricotta
  • 1/4 c heavy cream
  • 1 tsp vanilla extract
  • Fresh fruit combination: 1 pint strawberries, hulled and halved; 3 ripe plums, nectarines, pitted and cut into small slices; 1 pint fresh figs, stemmed and halved
  • 1/4 to 1/2 c honey
  • coarse black pepper
  • mint sprigs, garnish

Preparation

Step 1

Combine the ricotta, heavy cream and vanilla extract in a large bowl and whip unsing a whisk until light and fluffy, about 1 1/2 mins (or use a hand-held mixer). Spread the ricotta mixture on a platter and top with fruit combo, and drizzle with honey. Season with black pepper. Garnish with mint sprigs. Serve in small bowls or ramekins.
