Ingredients
- 8 bone-in chicken thighs
- 1/2 cup olive oil
- juice of a lemon
- salt and pepper
- 2 tbsp. honey
- 1 tbsp. grainy mustard, I used regular mustard.

Preparation
Step 1
Marinate the thighs in the marinate for 1 hour at least or up to a day.
Roast chicken, skin side down in oiled roasting pan,on 375 degrees for 20-25 minutes, flip and roast 10 more minutes, till juices run clean and is done.
Stir together a tbsp. mustard and 1 to 2 tbsp honey salt and pepper and brush glaze onto chicken and broil 5 minutes more or till brown.
