The title says it all. The bacon wrapped around this loaf will cook and melt into the meatloaf....Delicious!

Ingredients

  • 1 1/2 pounds of ground beef
  • 2 eggs
  • 1 onion, chopped
  • 1/2 cup barbecue sauce
  • 3/4 cup crushed crackers
  • 1 cup crushed potatoes
  • 3/4 tsp liquid smoke
  • 3/4 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1 pinch of cayenne pepper
  • 6 slices of bacon
  • 1 cup crushed potato chips

Step 1

Preheat oven to 375. In a large bowl, combine everything except the bacon. Mix well. On a lightly greased cookie sheet, shape the mixture into a loaf. lay the bacon slices across the width of the loaf and arrange them so that the entire surface is covered. Cover the loaf loosely with foil. Bake at 375 for 1 1/2 hours. (hint: wrapping the loaf with foil stops the bacon from turning to charcoal, but it also won't thoroughly cook it either. The bacon will melt and drip into the meatloaf, adding flavor but keeping the bacon uncooked. To avoid this, I remove the foil for the last 5 or 10 minutes of baking and keep an eye on it until the bacon is done just how we like it).
