Cheesy Stuffed Mushrooms

Ingredients

  • 12 large fresh mushrooms
  • 1/2 cup finely chopped onion
  • 1 TB olive oil
  • 1 TB chopped fresh parsley
  • 1/2 tsp. dried basil
  • 1/3 cup dry white wine or chicken broth
  • 1 cup finely shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Preparation

Step 1

Remove stems from the mushrooms; set caps aside. Coarsely chop the stems. In a large skillet, cook chopped mushroom stems & onions in oil over medium-low heat for 5 minutes or until tender. Stir in parsley, basil, & wine. Simmer for 10 minutes or until wine is absorbed. Remove from the heat; cool for 5 minutes. Stir in cheeses. Fill mushroom caps with cheese mixture. Place in a greased 8 x 8 casserole dish. Bake at 350 for 15 minutes or until filling is hot & cheese is melted.
