Ingredients
- 3 cups cooked chicken cut into bite sized pieces
- 3 Tablespoons olive oil
- 1 medium onion, cut into chunks
- 3 bell peppers of varying colors, cut into chunks
- 3 cloves minced garlic
- 3 teaspoons curry powder
- 1/4 teaspoon berbere seasong
- 2 cups chicken broth
- 3 medium potatoes unpeeled, cut into 1 inch pieces
- 1 (15 oz) can light coconut milk
- 1 cup peeled sliced carrots

Step 1
Heat the olive oil in a stockpot. Add the onions, garlic and peppers. Cook until tender. Add the curry powder and berbere and cook for 1 minute. Add the coconut milk, broth, chicken, potatoes and carrots. Bring to a boil then reduce heat and cook 15 to 20 minutes until potatoes are tender. Add salt if desired.
