Ingredients

    cups cooked chicken cut into bite sized pieces

  • 3

    Tablespoons olive oil

  • 1

    medium onion, cut into chunks

  • 3

    bell peppers of varying colors, cut into chunks

  • 3

    cloves minced garlic

  • 3

    teaspoons curry powder

  • 1/4

    teaspoon berbere seasong

  • 2

    cups chicken broth

  • 3

    medium potatoes unpeeled, cut into 1 inch pieces

  • 1

    (15 oz) can light coconut milk

  • 1

    cup peeled sliced carrots

Directions

Heat the olive oil in a stockpot. Add the onions, garlic and peppers. Cook until tender. Add the curry powder and berbere and cook for 1 minute. Add the coconut milk, broth, chicken, potatoes and carrots. Bring to a boil then reduce heat and cook 15 to 20 minutes until potatoes are tender. Add salt if desired.
