Ingredients
- 2 1/2 cup sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1/2 tsp salt
- 2 egg whites
- 1 tsp vanilla
- 1/2-1 cup chopped nuts

Step 1
In 3 qt. casserole, combine sugar, syrup, water and salt. Microwave on high 5 minutes, stir well. Microwave 8 - 12 minutes or until mixture reaches hard boil stage, 260 degrees on candy thermometer. Immediately beat egg whites until stiff peaks form. Slowly pour syrup over egg whites, beating at high speed with electric mixer. Add vanilla. Continue beating on high speed 4 to 5 minutes until mixture holds its shape and starts to lose its gloss. Fold in nuts. Quickly drop by heaping teaspoonfuls onto wax paper.
You can omit adding nuts to the mixture and place a pecan half on top of each candy.
