- 2 medium sweet potatoes, peeled
- 2 tablespoons olive oil
- 1 tablespoon light brown sugar
- 1/2 tsp kosher salt + extra for sprinkling
- 1/2 tsp ground black pepper

Step 1
Preheat oven to 450
Halve the sweet potatoes lengthwise and cuteach half into 3 long spears. Place on a sheet pan and toss with olive oil. Spread evenly. Combine brown sugar, salt, pepper and sprinkle over potatoes. Bake 15 minutes, turn and bake for an additional 5- 10 minutes. Sprinkle with salt & serve hot.
