Chicken and egg noodle casserole

Ingredients

  • 3 or 4 cooked breasts, boneless and chopped
  • 1 medium onion, chopped and sautéed in butter or olive oil
  • 2 cans of cream of chicken soup
  • 1 cup of sour cream
  • 1 tbsp. mayo
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup milk
  • 1 pkg egg noodles, cooked
  • salt and pepper to taste
  • 1 stick of butter
  • 1 cup Ritz crackers, crushed

Preparation

Step 1

Mix all but the last two ingredients together, adding noodles last. Pour into a buttered baking dish. Melt the butter and pour over crushed crackers. Sprinkle on top of casserole. Bake at 375 degrees uncovered for about 30 minutes.
