Ingredients

  • 1 Tbsp vegetable oil
  • 1 cup diced onion
  • 2 medium zucchini, cut into 1/2" cubes
  • 1 Tbsp minced garlic, or 1 tsp garlic powder
  • 1 Tbsp chili powder
  • 12 oz can corn niblets, drained
  • 1- 19 oz can red kidney beans, drained, rinsed and drained again
  • 2 cups spicy tomato sauce or spaghetti sauce
  • Sour cream for garnish

Preparation

Step 1

In an electric fry pan set at 300F, or a skillet over medium heat, heat the oil and add the zucchini and onions. Cook, stirring occasionally till the zucchini is tender, about 8 minutes. Add the garlic and chili powder and cook 1 more minute.
Stir in the corn and beans and the tomato sauce. Bring to a boil and reduce the heat to low. Simmer this for 10 minutes.
