Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped (I used dry onion)
  • 2 large red peppers, seeded and chopped
  • 15 oz diced tomatoes, undrained
  • 4 C Original V8 juice
  • 1/4 C brown sugar
  • Pepper to taste
  • Red pepper flakes, about 1 tsp
  • 1 C Minute Rice...added in last

Preparation

Step 1

Brown ground beef and drain. Add all ingredients except the rice to your crockpot.
Cook on low at least 6 hours.
Ten minutes before serving, add rice to the crockpot and stir.
Cover crockpot.
Serve with grated cheese sprinkled on top
