Lasagna Chicken and Roasted Broccoli

Ingredients

  • 4

    pieces boneless skinless chicken breast, pound thin

  • 1-½

    cups Ricotta cheese

  • 1

    egg

  • 1

    Tbsp oregano

  • 1

    Tbsp basil

  • salt and pepper

  • ¼

    cup Parmesan cheese

  • ¾

    cup mozzarella cheese

  • 2

    cups pasta sauce

  • For the broccoli:

  • 2

    large heads of broccoli, chopped into florets

  • olive oil

  • 2

    Tbsp red pepper flakes

  • salt and pepper

Directions

Preheat oven to 350 degrees. In a large bowl, mix together your riccotta cheese, egg, oregano, basil, parmesan, salt and pepper. Spread a little more than 1/4 cup of the ricotta mixture onto your thin piece of chicken. Roll the chicken carefully, and place in a medium size baking dish with the chicken seam side down. Do this with all 4 pieces. Top the chicken with the pasta sauce, and cover with mozzarella cheese. Cover with foil, and cook for about 45 minutes, until the chicken is cooked through. For the broccoli: Add the broccoli to a large bowl, and drizzle about 1/4 cup of olive oil, and add the red pepper flakes, salt and pepper. Toss together until the broccoli is coated. Place the broccoli on a baking sheet, and cook in the oven with the chicken for approximately 35 minutes. Recipe makes 4 servings. Each serving is 1 piece of chicken and 2 cups of broccoli. Each serving has 12.75 carbs
