  • 1/2 cup butter
  • 1 red pepper, diced and seeded
  • 1 green pepper, diced and seeded
  • 1 onion, chopped
  • 1 pound frozen hash browns
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 eggs

Preparation

Step 1

In large skillet, melt butter over high heat. Add peppers and onions. Sauté 2 minutes, stirring occasionally. Add hash browns, salt and pepper. Mix well. Cook 10-12 minutes or until tender and golden, stirring frequently.

Reduce heat to medium; using a spoon, make 6 evenly spaced indentations about 1/2 inch deep in potato mix.

Crack eggs one at a time and place inch in an indentation.

Cover the skillet and cook 7-9 minutes or until eggs are set and cooked as desired.
