Herbed Roast Pork

  • 2 tsp dried thyme
  • 1 tsp fennel seeds
  • 1 tsp dried tarragon
  • 1 tsp dried marjoram
  • 1 clove garlic, minced about 1 tsp
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp crushed dried rosemary
  • 2 tbs olive oil
  • 5 lb bone-in pork loin roast


Servings 8


Step 1

In a small bowl combine all ingredients except roast.
Rub over pork.
Refrigerate 6hrs to 24hrs.
Preheat oven to 450F.
Place pork in a shallow baking dish.
Roast 15 minutes.
Reduce oven temp to 350F.
Cook pork until internal temp reached 155F., about 1 hour and 20 minutes.
Let stand 15 minutes before slicing.
