Ingredients
- 6 T oil
- 4 T chopped cilantro
- 2 tsp. Dijon mustard
- 1 1/2 tsp. sugar
- 2 limes (juiced & zested)
- 1 1/2 lbs. chicken breasts
- 1 package fajita seasoning
- 1 can black beans
- 2 ears of corn
- 1 head romaine lettuce
- 2 large tomatoes
- 1 c shredded Cheddar cheese
- 1 avocado (sliced)
Preparation
Step 1
Whisk together the first 4 ingredients, 1/4 lime juice and 1 tsp. lime zest. Season with salt and pepper. Coat chicken with cooking spray, sprinkle with seasoning and grill in pan until done. Rinse black beans in cold water and drain. Using knife, carefully cut corn from ears. Slice lettuce, chicken, and tomatoes. Stir juice from tomatoes and chicken into dressing. Layer lettuce, chicken, beans, corn, tomatoes in bowl. Top with cheese and avocado. Drizzle with dressing.
