15-Minute Italian-Style Chicken & Rice

Ingredients

  • 2 cups Minute White Rice, uncooked
  • 1 Tbsp. oil
  • 4 small boneless, skinless chicken breast halves (1 lb.)
  • 1 can (14.5 oz.) Del Monte Diced Tomatoes with Basil, Garlic & Oregano, undrained
  • 1 can (14.5 oz.) Del Monte cut green beans, drained
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Preparation

Step 1

1. Prepare rice according to package directions.
2. Heat oil in large skillet on medium-high heat. Add chicken. Cook until browned on both sides.
3. Add tomatoes with liquid and green beans, drained. Bring to a boil; cover. Reduce heat to medium-low.
4. Simmer 5 minutes or until chicken is cooked through. Stir in salt and pepper. Serve over cooked rice.
