Ingredients

  • 1 1/2 cups AP flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tbs butter - not margarine
  • 1 tbs canola oil
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg white
  • 1/2 cup apple juice
  • 2 tsp vanilla extract
  • 3 cups old fashioned rolled oats - not instant
  • 1 cup raisins

Preparation

Step 1

Preheat oven to 350F.
Grease 2 large cookie sheets; set aside.
In a medium bowl combine flour, baking soda and powder, cinnamon and salt; set aside.
Melt butter in small saucepan over medium high heat.
Swirling butter in the pan, cook until it turns nutty brown, about 1 minute.
Pour browned butter into another mixing bowl.
Add oil, juice, both sugars, vanilla, egg and egg white.
Beat until we combined.
Stir in dry ingredients.
Fold in oats and raisins.
Drop tablespoon rounds onto cookie sheets 2 inches apart.
Flatten with back of spoon.
Bake one cookie sheet at a time; 10-12 minutes or until slightly puffed and lightly browned around the edges.
Transfer to a wire rack to cool completely.
