Ingredients
- 2 lbs stew meat (yes, stew meat....trust me on this)
- 1 C. frozen bell peppers & onions
- 10 oz can corn, drained
- 1/2 C. BBQ sauce
- 14 oz can diced tomatoes
- 2- 8oz boxes corn muffin/bread mix (I use Jiffy)
- 2 eggs
- 2/3 C. milk
Preparation
Step 1
Mix first 5 ingredients in large zipper bag. Zip and squish around to mix.
Mix last 3 ingredients in small container with lid. Cover.
When ready to cook:
Pour meat mixture into slow cooker.
Pour cornbread mix over top of meat and spread.
Cook on low 6 hours
