Cu Cu Du Ma

Ingredients

  • 2 tablespoons olive oil
  • 1 small sweet onion, thinly sliced
  • 1 clove garlic, sliced
  • 1 medium zuchinni, cut inot 1-inch chunks
  • 1 (14 ounce) can plum tomatoes
  • 1/2 cup water
  • Salt and pepper to taste

Preparation

Step 1

Saute onions in oil until very slightly brown, and then add garlic and cook until very slightly brown as well. Add all vegetables, tomatoes and water; season with salt and pepper. Cook until potatoes are fork tender.
