Chicken and Stuffing Casserole

Ingredients

  • 3 cups one-step stuffing mix for chicken (12oz container)
  • 1 1/2 cups water
  • 8 Tbsp butter, divided
  • 1/4 cup flour
  • 1/8 tsp white pepper
  • 14.5 oz chicken broth
  • 2 egg yolks
  • 2 cups cubed cooked chicken

Preparation

Step 1

1. Heat oven to 350F. Spray 8" (2qy) glass baking dish. Prepare stuffing mix as direced, using water and 3 Tbsp of butter. Reserve 1 cup stuffing; layer remaining stuffing on bottom of dish.

2. Melt remaining 5 Tbsp butter in medium saucepan over medium heat. Stir in flour and pepper with wire whisk; cook 1-2 mins or until smooth and bubbly, stirring constantly. Gradually Add broth, cooking and stirring for 2-3 mins or until mix boils and thickens. Remove from heat; cool 2-3 mins.

3. Place egg yolks in a small bowl. Add a small amount of hot broth mix; blend well. With wire whisk, stir egg yolk mix into hot broth mix. Add chicken; mix well. Pour mix over stuffing in dish. Top with reserved stuffing.

4. Bake at 350 for 35-40 mins.
