Ingredients

  • 1/2 cup green olive tapenade
  • 2 Tbsp lemon juice
  • 4 c salad greens
  • 1/2 cup canned no salt chickpeas, drained and rinsed
  • 1/2 cup drained and sliced roasted red peppers
  • 1/4 med seedless cucumber halved, thinly sliced(1/2c)
  • 1/2 sm red or sweet onion thinly sliced
  • 2 oz crumbled goat cheese
  • 4 whole wheat wraps or tortillas

Preparation

Step 1

Mix tapenade and lemon juice in large bowl. Add greens, chickpeas, peppers, cucumber and onion. Toss to mix. Add cheese and too.

Warm wraps and arrange one quarter of the salad mix onto each wrap. Roll and cut in half.
