Ingredients
- 1/2 cup chopped onion
- 2 tsp. olive oil
- 1/4 cup dry sherry
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 1/2 cup chopped spinach
- 2 cups diced cooked chicken, skin removed
- 1 cup wild rice
- 5 cups defatted chicken broth
- 1/2 tsp. dried thyme
- 1/2 tsp. dried marjoram
- Pinch of ground ginger
- 1/8 tsp. cumin
- Salt and pepper to taste
- 1 tbsp. regular or law sodium soy sauce, or to taste

Preparation
Step 1
In a large stockpot over medium-high heat, steam-saute onion in oil and sherry until soft but not browned. Add celery, carrots and spinach; continue cooking for 5 minutes, stirring frequently. Add chicken, wild rice, broth, thyme, marjoram, ginger and cumin, and bring to a boil. Lower heat, cover and simmer until wlld rice is tender (30 to 35 minutes). Before serving add salt, pepper and soy sauce to taste.
