Ingredients

    cup chopped onion

  • 2

    tsp. olive oil

  • ¼

    cup dry sherry

  • ½

    cup chopped celery

  • ½

    cup chopped carrot

  • ½

    cup chopped spinach

  • 2

    cups diced cooked chicken, skin removed

  • 1

    cup wild rice

  • 5

    cups defatted chicken broth

  • ½

    tsp. dried thyme

  • ½

    tsp. dried marjoram

  • Pinch of ground ginger

  • tsp. cumin

  • Salt and pepper to taste

  • 1

    tbsp. regular or law sodium soy sauce, or to taste

Directions

In a large stockpot over medium-high heat, steam-saute onion in oil and sherry until soft but not browned. Add celery, carrots and spinach; continue cooking for 5 minutes, stirring frequently. Add chicken, wild rice, broth, thyme, marjoram, ginger and cumin, and bring to a boil. Lower heat, cover and simmer until wlld rice is tender (30 to 35 minutes). Before serving add salt, pepper and soy sauce to taste.
