PORK TENDERLOIN W/ PAN SAUCE

Ingredients

  • 1-1 lb pork tenderloin
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup soy sauce
  • 1 tbs Worcestershire sauce
  • 1 tbs lemon juice
  • 1 tsp dried mustard
  • 2 cloves minced garlic
  • 2 tbs minced fresh parsley
  • Sauce
  • 1/4 cup reserved marinade
  • 1 cup beef broth
  • 1 tbs butter

Step 1

1. Combine all marinade ingredient, reserve 1/4 cup and set aside. Marinate pork 3 hours.
2. Oven 375. Remove pork from marinade, and brown In skillet on all sides. Place on baking pan, and cook about 20" or until pork reaches about 145 degrees. Remove from pan, tent tenderloin with foil.
Scrape baking pan drippings into skillet, add broth and reserved marinade and boil until 2-3 minutes, or until slightly reduced. Off heat, swirl in butter. Spoon pan sauce over pork and serve
