Chili Cheese Corn Bread

Ingredients

  • 1 cup flour
  • 3/4 cup cornmeal
  • 2-3 Tbsp. sugar
  • 21/2 tea. baking powder
  • 3/4 tea. salt
  • 1 Tbsp. butter
  • 2 eggs, lightly beaten
  • 1 cup milk
  • 1/4 cup vegetable oil or butter, melted
  • 1 cup shredded Monterey Jack cheese 94 oz)
  • 1 4-oz. can diced green chile peppers, drained
  • 1-2 tea. chili powder
  • GREEN ONION - BACON CORN BREAD
  • 1/3 cup crumbled cooked bacon
  • 1/4 cup sliced green onions
  • Stir into batter before pouring into pan.

Preparation

Step 1

Preheat oven to400 degrees. In a medium bowl stir together flour, cornmeal, sugar, baking powder, and salt; set aside.

Place the 1 Tbsp. butter in an8x8x2" baking pan. Place pan in the preheated oven about 3 minutes or until butter is melted. remove from oven; swirl butter to coat bottom and sides of pan.

Meanwhile, in a small bowl combine eggs, milk, and oil. Add egg mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). Fold in cheese, chile peppers, and chili powder. Stir in bacon and green onions if using.

Pour batter into the hot pan, spreading evenly. Bake for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.
