Ingredients
- 1 lb pork tenderloin
- 2 tsp five spice powder
- 1/4 tsp kosher salt
- 2 tsp + 2 tsp light butter
- 3 large Granny Smith apples sliced
- 1/2 cup dried cranberries
Preparation
Step 1
Divide tenderloin into two same length pieces. Rube spice powder and salt over each slice.
In small skillet, melt 2 tsp butter. Add pork and brown on all sides, about 4 minutes. Cover and continue to cook, turning occasionally until cooked about 12 minutes. Cool 5 minutes and then slice into 6 medallions.
In heavy skillet combine apples, cranberries and remaining 2 tsp butter and salt with 1.2 cup water. Cook, skaing pan utnil liquid has almost evaporated and apples are softened. Serve with pork medallions.
