Ingredients
- 4 boneless skinless chicken breast halves (1lb)
- 1/2 tsp + 1/8 tsp salt
- 1 ruby red grapefruit
- 1 avocado peeled, pitted and diced
- 4 radishes thinly sliced
- 1/4 cup chopped basil leaves
Preparation
Step 1
Place chicken in saucepan with 4 cups water and 1/2 tsp salt. Bring to boil over high heat. Turn off heat and let sit covered another 15 minutes until finished cooking.
Peel and pith grapefruit. Working with a bowl to catch juice, free each segment from membrane and cut into bite size pieces. Gently toss grapefruit with juice, avocado, radishes, basil and 1/8 tsp salt
Drain chicen and cut into 1/2 inch slices. Divide salsa into 4 portions and add a quarter of the chicken to each, drizzling the chicken with juice from the salsa mix. Serve over lettuce.
