Basil Shrimp & Broccoli Stir Fry

Ingredients

  • 1 tbsp. olive oil
  • 3/4 / lb. fressh or frozen medium shrimp (thawed, shelled and deveined)
  • 2 cups frozen broccoli cuts
  • 1 med. red bell pepper, cut in 2" strips
  • 1/2 cup snow peas
  • 1/2 cup fresh mushrooms
  • 1/4 cup water chestnuts
  • 1/2 cup boiling water
  • 2 tsp. instant chicken bouillon
  • 1/4 cup cold water
  • 1 tbsp. cornstarch
  • 1 tsp. dried basil
  • 1 tsp. lemon juice
  • 1/2 green onion, sliced

Step 1

Prepare all ingredients and have them ready to pur into a hot pan. Heat olive oil in large skillet on medium heat. Add shrimp and cook, stirring constantly, until pink (3-4 minutes). Remove shrimp to a serving plate. Add all vegetables except green onion.
Cook, stirring constantly until tender. Dissolve boullion in a bowl of 1/2 cup boiling water. Add vegetables. In a small bowl, mix 1/4 cup cold water with cornstarch, basil, and lemon juice Stir well. Gradually pour into skillet. Cook stirring constantly until thickened. Add green onion and shrimp. Heat until shrimp are warm and serve over rice.
