Ingredients

  • 3 pounds of chuck roast or stew meat
  • 4 tablespoons of Chili powder
  • 2 tablespoons of ground cumin
  • 3 tablespoons of flour
  • 3 tablespoons of vegetable oil
  • 1 medium onion - diced
  • 1/2 can of beer (drink the rest)
  • 2 15oz. cans of beef broth
  • 2 cans of chili beans
  • salt and pepper

Preparation

Step 1

Remove fat from chuck roast and cut into 1" cubes. Combine chili powder, cumin, and flour in a small bowl and mix together well. Pour mixture over cubed beef, coating well. Heat vegetable oil in a large pot and cook onions until transparent. Add beef to pot and cook for 2 min. over high heat while stirring constantly so the meat won’t stick to the pot. Add 1-1/2 cans of beef broth and beer and stir well. Simmer over low temperature for 1 hour. Add the remaining beef broth and chili beans. Simmer for another hour. Add salt and pepper to taste.
