Ingredients

  • 1/2 c kidney beans
  • 1/2 c pinto beans
  • 2 cups ground beef
  • 1/2 white onion, small dice
  • 1/2 jalepeno, small dice
  • 1/2 poblano pepper, small dice
  • 1/2 green bell pepper, small dice
  • 1/2 red bell pepper, small dice
  • 2 cups whole, canned tomatoes
  • 1 cup tomato juice
  • 1/8 c brown sugar
  • 1 tbsp cayenne pepper
  • 1 tsp paprika
  • 1/2 tsp red chili flakes
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1/2 small can of tomato paste
  • Salt and pepper
  • 2 tbsp olive oil

Step 1

If using uncooked beans, put beans in a saucepan and cover with cold water and simmer until cooked. If using cooked, canned beans, rinse and drain well.

Puree tomatoes and tomato juice in a blender. Put into a saucepan and add brown sugar. Heat on low until sugar is melted. Turn off the heat and set aside.

Heat oil in a saute pan on medium-medium high heat. Add ground beef and cook until almost all cooked through. Add the onion and cook until softened. Add peppers and cook until softened. Season with salt and pepper to taste. Add spices (chili powder, cayenne, paprika, chili flakes, cumin) and stir until all the ingredients are covered in spices. Add the tomato paste and stir until all ingredients are covered. Move the meat mixture off the stove and add to the tomato puree and brown sugar mixture. Heat the saucepan over medium heat and simmer 30 mins. Add beans about 5 minutes before the chili is done to heat through and thicken. Season with salt and pepper as needed.
