  • 1 dozen eggs
  • 1 qt milk
  • 1 pint whipping cream
  • 2 C sugar
  • 2 vanilla beans
  • 3/4 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1 C 151 proof rum
  • 1 C bourbon
  • 3/4 C brandy



Step 1

Put the eggs into a blender and blend until smooth. In a large saucepan, combine the eggs, sugar and milk. Scrape the vanilla seeds from both beans into the pan. Heat over a medium heat, stirring constantly until the mixture reaches 160°. Add the spices and cool as quickly as possible. Chill overnight.
Add the rum, bourbon, and brandy. Beat the whipping cream and add to the chilled mixture. Pour into glasses, top with a little nutmeg.
