Chicken Broccoli Soup

  • 1 c chopped celery
  • 1 c chopped carrot
  • 1 big head broccoli
  • 3/4 c onion
  • 3 cloves garlic
  • Butter to saute veggies
  • Spices including ground red pepper, black pepper, parsley flakes.
  • 2 T butter
  • 2 T flour
  • 1 c milk
  • 5 chicken tenders - cooked
  • 1 can chicken broth
  • 2 c cheddar cheese



Step 1

Steam broccoli; save water. Saute other vegetables in butter and add spices. Crush broccoli and vegetables smaller.

In a large pot, make roux with 2 T butter and flour; add milk. After it is good and thick, gradually add chicken broth and water used to steam broccoli.

Dissolve a couple of chicken bouillon cubes in hot water and add to soup. Add vegetables and chicken. Add more milk, water, or broth if needed to achieve desired consistency. Add cheese last and more spices if needed.
