Ingredients

  • Classic vinaigrette
  • Acid: 1 tablespoon red wine vinegar.
  • Seasoning: Salt and pepper to taste.
  • Oil: 3 tablespoons extra-virgin olive oil.
  • Serving suggestion: Toss with salad of baby greens or tomatoes and mozzarella cheese.
  • Lemon dill
  • Acid: 1 tablespoon fresh lemon juice.
  • Seasoning: 1 teaspoon Dijon mustard, 1/2 teaspoon chopped fresh dill, salt and pepper to taste.
  • Oil: 3 tablespoons canola oil.
  • Serving suggestion: Drizzle over roasted baby vegetables or seafood salad.
  • Balsamic
  • Acid: 1 tablespoon balsamic vinegar.
  • Seasoning: Salt and pepper to taste.
  • Oil: 3 tablespoons extra-virgin olive oil.
  • Serving suggestion: Toss with romaine lettuce or use as marinade for seafood or chicken.

Preparation

Step 1

Asian
Acid: 1 tablespoon rice wine vinegar, 1 tablespoon fresh lemon juice.
Seasoning: 1 tablespoon Asian fish sauce, 1/2 tablespoon sugar, 1 clove minced garlic, salt and pepper to taste.
Oil: 4 tablespoons peanut oil.
Serving suggestion: Drizzle over stir-fried vegetables or use as marinade for pork loin.

Mustard
Acid: 1 tablespoon balsamic vinegar.
Seasoning: 1/2 teaspoon Dijon mustard, salt and pepper to taste.
Oil: 3 tablespoons extra-virgin olive oil.
Serving suggestion: Toss with salad of butter lettuce and sliced apple, or use as marinade for steaks.

Sweet
Acid: 1 tablespoon apple cider vinegar.
Seasoning: 1 1/2 tablespoons soy sauce, 2 tablespoons honey.
Oil: 4 1/2 tablespoons safflower oil.
Serving suggestion: Marinade for chicken or turkey cutlets.
