Brookforest Eggs

Great breakfast dish. This can be made for any number of people, just keep adding layers. 2 eggs per person
Ingredients
- 9 eggs
- 1 1/2 cups chopped cooked ham
- 3 tbsp chopped green pepper
- 2 3oz cans sliced mushrooms
- sliced American cheese
- salt
- pepper
- Paprika

Step 1
Break 3 eggs in bowl and beat lightly. In ungreased casserole dish pour enough egg to barely cover the bottom. Sprinkle a thick layer of ham over that. Add a light layer of green peppers and a thick layer of sliced drained mushrooms. Salt and pepper liberally. Take three or four of unbroken eggs and crack them with yolk unbroken on top of the other ingredients. Drop them at random, keeping yolks in tact. Cover with American cheese or something tangy like cheddar. Now start another layer, cover with cheese, sprinkle with paprika, cover and put in a 275 - 300 degree oven for 2 hrs.
Best test to see if done is to stick a good sized spoon in the middle. If it stands up its done.
