PORK LOIN (Roast with Rosemary and Garlic)

Step 1

Take a 4 lb pork loin, slice it open to be somewhat flat. Then make a paste of 8 minced garlic cloves, 1/4 c fresh rosemary leaves and 1/2 tsp salt on cutting board and use knife to create a paste. Transfer to a bowl and mix with 2 tbsp olive oil. Spread inside and salt and pepper it. Then roll back up and tie with twine. Put in roasting pan, fat side up, and roast in preheated 400 degree oven, after adding 2 c dry white wine to pan, needs to be at least 145 degrees, will take about 2 hours. Let rest 10 minutes before carving. Spoon fat from surface of pan juices. Then slice and serve with pan juices.
