Lemon Bars

  • 6 Eggs
  • 3 Cups Sugar
  • 1 1/2 tsp. Baking Powder
  • 1/2 Cup Flour
  • 1/3 Cup Lemon Juice
  • 2 Tbs. Lemon Zest
  • Crust: 3 Cups Flour
  • 1 1/2 Cup Powdered Sugar
  • 3 Sticks Butter, melted



Step 1

In a large bowl, whisk eggs until light in color. Add sugar, baking powder, flour and salt until combined. Add lemon zest and lemon juice and stir well. Preheat oven to 350 degrees. Lightly spray a 9" x 13" baking pan. Mix flour and powdered sugar together. Add melted butter and mix until crumbly. Press firmly into pan making an even layer. Bake for 15 minutes at 350 degrees. Remove crust from oven and pour lemon filling over crust. Bake for an additional 45 minutes until lemon filling is set. Sprinkle with powdered sugar.
Optional: Reserve 1/4 cup crust mixture and mix with an additional 2 teaspoons of powdered sugar and crumble with fingers until fine. Then sprinkle the mixture over top of lemon filling before baking. Then sprinkle with more powdered sugar before cutting into squares.
