  • 2 cups penne pasta, uncooked
  • 1 lb skinless chicken breats cut into bite sized pieces
  • 1 1/4 thick and chunky salsa
  • 1 cup frozen corn , thawed
  • 1 large green pepper, cut into strips
  • 1 cup finely shredded four cheeses

Preparation

Step 1

cook pasta as directed on pkg. omitting salt
heat a large non stick skillet sprayed with cooking spray in medium high heat. add the chicken ; cook and stir 2 minutes. stir in salsa, corn and peppers. bring to a boil simmer on medium low heat 10 minutes or until chicken is done, stirring occasionally.
drain pasta. add tto the chicken mixture; mix lightly. top with cheese. remove from heat, cover. let stand 1 minute or until cheeese is melted
