Basic Tomato Sauce

  • 1 can (28 oz) imported plum tomatoes from the juice, reserving the juice
  • 2 Tbl olive oil
  • 1-2 cloves garlic
  • kosher salt
  • basil leaves, julienned



Step 1

Chop the tomatoes very well on a cutting board. The tomatoes should be chopped finely but retain some texture.
Heat the 2 Tbl olive oil in a saucepan over medium heat; add 1-2 cloves minced garlic. Cook, 30 seconds.
Add the chopped tomatoes; season with a little kosher salt. Simmer until sauce thickens a little, about 5 minutes.
If you prefer a looser sauce, add some of the reserved juice and allow it to cook a few minutes. Add the julienned basil leaves at the end.
